Sultana Rye Muffin Bites

Ingredients

  • 2 C rye flour
  • 4 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 C sultanas
  • 3 T raw honey
  • 4 T coconut oil
  • 1 C water
  • extra coconut oil for greasing tins

Method

  1. Preheat the oven to 200 degrees Celsius.
  2. In a large bowl mix together the rye flour, baking powder, cinnamon and sultanas.
  3. Combine the honey, coconut oil and water, add to the dry ingredients and stir until just combined.
  4. Grease mini muffin tins with coconut oil and fill with muffin mixture.
  5. Bake for 10 mins or until a wooden skewer comes out clean.
  6. Leave to stand in tins for 5 mins before cooling on wire rack.

Makes 24-30 mini muffins.
