Sultana Rye Muffin Bites
Ingredients
- 2 C rye flour
- 4 tsp baking powder
- 1 tsp ground cinnamon
- 1 C sultanas
- 3 T raw honey
- 4 T coconut oil
- 1 C water
- extra coconut oil for greasing tins
Method
- Preheat the oven to 200 degrees Celsius.
- In a large bowl mix together the rye flour, baking powder, cinnamon and sultanas.
- Combine the honey, coconut oil and water, add to the dry ingredients and stir until just combined.
- Grease mini muffin tins with coconut oil and fill with muffin mixture.
- Bake for 10 mins or until a wooden skewer comes out clean.
- Leave to stand in tins for 5 mins before cooling on wire rack.
Makes 24-30 mini muffins.
