Banana Popsicles

Recipe by Pete Evans (Healthy Every Day)

Ingredients:

  • 250 mL coconut water
  • 250 mL coconut cream or coconut milk
  • 2 eggs
  • 2 bananas, peeled, chopped and frozen
  • 1 T honey

Method:

  1. Mix the coconut water and coconut cream or milk in a jog. Pour into ice-cube trays and place in the freezer for 4-5 hours, or until frozen.
  2. Remove the trays from the freezer and place the coconut ice cubes in a blender or food processor with the eggs, bananas and honey. Process until smooth.
  3. Pour the mix into popsicle moulds, freeze for  1 hour, then insert a popsicle stick into each one. return to the freezer for at least 4 hours, or until frozen. You can now enjoy your banana popsicles plain or try one of the flavour combinations below.

Flavour Variations

Chai

Add 1 teaspoon of ground cinnamon, ½ teaspoon of ground cardamom, ½ teaspoon of ground cloves, 1 tablespoon of finely grated ginger and 1 tablespoon of licorice root powder before blending.

Chocolate

Add 2 tablespoons of cacao powder before blending.

Avocado

Add 1 chopped avocado before blending.
